MUSTARD SCENTED EYE ROUND ROAST
4 tbs olive oil
1 oz envelope dry onion soup mix
2 tbs Dijon mustard
4 pounds beef eye round roast
3/4 pound onions, peeled
2 leeks, trimmed and quartered
Heat oven to 350 degrees. In small bowl, stir together 2 tbs oil, onion soup mix
and mustard. Rub 1/2 soup mixture over beef. Place beef in roasting pan. Stir
onions and remaining oil into remaining onion soup mustard mixture. Place onions around beef in pan. Roast 1 hour 30 min or until 140 degrees on thermometer. Add leeks to pan after 1 hour 10 min. Let beef sit 10 min. before slicing, then serve. MAKES 8 SERVINGS.
