CHICKEN WITH POTATOES & PEPPERS
1/4 cup Wish-Bone Italian Dressing
2-1/2 - to 3-pound chicken, cut into serving pieces
1 can (28 oz.) whole peeled tomatoes, undrained and chopped
1 pound all-purpose potatoes, cut into chunks
2 medium onions, cut into quarters
2 medium red, green or yellow bell peppers, cut into thin strips
1 tablespoon fresh rosemary leaves* (optional)
1 teaspoon dried thyme leaves, crushed (optional)
1 teaspoon salt
1/4 teaspoon ground black pepper
1. Preheat oven to 375°.
2. In 12-inch skillet, heat Italian dressing over medium-high heat and brown
chicken; set aside.
3. In 13 x 9-inch baking pan, combine remaining ingredients
4. Add chicken and turn to coat.
5. Bake uncovered, stirring occasionally, 50 minutes or until chicken is done and vegetables are tender.
6. Serve, if desired, with French or Italian bread.
Makes 4 servings
*Substitution: Use 1 teaspoon dried rosemary leaves. Also terrific with
Wish-Bone Robusto Italian or Lite Italian Dressing.
