Monday
Chinese Chicken Stir Fry:
Stir-Fry diced chicken with hoisin and rice vinegar; remove from skillet. Add minced garlic, ginger, and chopped veggies; cook until crisp-tender. Dissolve 1-2 tsp. cornstarch in same amount of chicken broth; pour in pan with additional broth and hoisin; cook until sauce is thick. Return chicken to pan and serve.
Tuesday
Pizza Margherita
Top a prepared crust with tomato sauce, fresh basil, and thin slices of mozzarella. Bake until cheese is bubbly and serve.
Wednesday
Lime Cilantro Shrimp
Season shrimp, saute for 2 minutes then turn. Add the juice of a lime, some chopped cilantro, and a couple of chopped tomatoes. Saute until shrimp is cooked and serve with rice.
Thursday
Balsamic Pork
Season and saute boneless center-cut pork chops until nearly cooked;remove from pan. Add balsamic vinegar and some chicken broth to pan, boil until thickened. Stir in quartered, seedless grapes; add pork back to pan to finish cooking and warm through.
Friday
Chicken Quesadillas
Layer precooked diced chicken, bottled roasted red peppers, sliced mushrooms, corn, and shredded jack cheese on half of a flour tortilla. Fold over and cook in a heated nonstick skillet until cheese is melted. Serve.
