HONEY BARBECUE HAM WITH ROASTED POTATOES
1/2 cup ketchup
2 tbs cider vinegar
2 tbs brown sugar
1 tsp Worcestershire sauce
1 tsp + 1 tbs oil
1/4 tsp dry mustard
3 1/2 pounds fully cooked boneless ham
3 pounds potatoes, cut into 1" pieces
1 tbs chopped parsley
1/2 tsp salt
1/2 tsp pepper
1). In a saucepan, stir together first 4 ingredients, 1 tsp oil and mustard.
Bring to a simmer and cook 5 min. Score surface of ham, making diamond shapes
1/2" deep. Place ham in a slow cooker and brush with the barbecue sauce.
2). In a bowl, stir together potatoes and remaining oil. Place potatoes around
ham in slow cooker. Cook 2 hours on high or 5 hours on low, brushing ham with
sauce once every hour. Remove ham from slow cooker and set aside. Stir parsley,
salt and pepper into potatoes. SERVE WITH HAM AND REMAINING SAUCE. Makes 12 servings
