Salmon Patties
2 cans (14 oz.) salmon
1 small onion, minced
1 egg
salt and pepper
12 saltine crackers, crushed
1 tbsp. baking powder
Drain salmon, reserving 3 tbsp. of juice.
Flake salmon with a fork, removing skin and bones.
Add onion, salt, pepper, egg, and crackers.
Mix reserved salmon juice with baking powder and add to salmon mixture, mixing well.
Shape into patties and fry in 1 tbsp. oil on medium heat about 2-3 minutes on each side until crispy and browned. Drain on paper towel lined plate. Makes 12 patties.
