Menu: Week 9

Sunday:

Peppered Flank Steaks with Sauteed Onions*
Mashed potatoes
green beans

Monday:

Pita Pizzas*
Green Salad

Tuesday:

Mediterranean Tuna Salad*
Iceberg Lettuce Wedges*

Wednesday:

Baked Ziti*
steamed asparagus

Thursday:

Honey Soy Salmon*
Brown Rice
Green peas

Friday:

Turkey Burgers*
Oven Fries
Coleslaw

Saturday:

Chicken Breasts with Mango Salsa*
Steamed Broccoli
Blender Coconut Pie*

PEPPERED FLANK STEAK WITH SAUTEED ONIONS
2 lbs. flank steak
coarse pepper
olive oil
2 large onions
Worchestershire Sauce

Press pepper into steaks before cooking in a little olive oil. Cook onions in a little olive oil until soft. Sprinkle with Worchestershire sauce before serving.

PITA PIZZAS
whole wheat pitas
pizza sauce
shredded cheese
toppings~ sliced onions, mushrooms, green peppers, pepperoni, sliced black olives, etc.

Assemble pizzas and bake on a cooking sheet at 450 degrees until cheese bubbles.

MEDITERRANEAN TUNA SALAD
12 oz. can tuna, drained
16 oz. can chickpeas, rinsed and drained
1 pt. halved cherry tomatoes
12 oz. bag DOLE Very Veggie Salad Mix
1/2 cup bottled Greek salad dressing

Toss together all ingredients, serve with lemon wedges if desired.

ICEBERG LETTUCE WEDGES
1 iceberg lettuce
1 bottle your fav salad dressing

Cut lettuce into 4 wedges and drizzle with salad dressing, serve immediately.

BAKED ZITI
1 box ziti, cooked and drained
2 jars pasta sauce
8 oz. shredded mozzarella

Toss cooked pasta with pasta sauce and mozzarella. Put in greased casserole dish and sprinkle with more shredded mozzarella. Bake (uncovered) at 350 degrees for 25 minutes. Serve with crusty bread if desired.

HONEY SOY SALMON
4 salmon filets
soy sauce
honey
lime juice

Make a mixture of soy sauce, honey, and a little lime juice. Brush over salmon before cooking.

TURKEY BURGERS

1 lb. ground turkey
1/2 onion, minced
salt and pepper

Mix all ingredients lightly, form into 4 burgers and grill to desired doneness. Top with lettuce, sweet onion slices and tomato if desired.

CHICKEN BREASTS WITH MANGO SALSA
4-6 boneless skinless chicken breasts
1 1/2 cups diced mango
2 tbsp. chopped red onion
2 tbsp. chopped cilantro
2 tbsp.chopped pickled jalepeno pepper
salt

To Make Salsa:
Mix mango, red onion, cilantro, and pickled jalepeno pepper, sprinkle with salt. Serve over hot grilled chicken breasts.

Blender Coconut Pie

4 eggs
6 tbsp. margarine, melted
1 c. sugar
1 tsp. vanilla
2 c. milk
1 c. coconut
Dash of salt
1/2 c. flour

Blend 10 seconds in blender. Put in 10 inch pie plate. Bake 50-60 minutes or until knife comes out clean. Pie makes its own crust.
