Crock Pot Yankee Soup
1 lb. boneless round steak, cut into 1/2" cubes
1 can (14-1/2 oz.) diced tomatoes, undrained
3 cups water
2 medium potatoes, peeled and cubed
2 medium onions, diced
3 celery ribs, sliced
2 carrots, peeled and sliced
3 beef bouillon cubes
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. ground black pepper
1-1/2 cups frozen mixed vegetables, thawed
Combine first 12 ingredients in the crock pot. Cover and cook on HIGH heat setting for 6 hours.
Add vegetables; cover and cook on HIGH heat setting for 2 hours longer or until the meat and vegetables are tender.
Yield: 8 to 10 servings (about 2-1/2 quarts).
