SKILLET POTATOES WITH BACON & CHEDDAR
4 slices bacon, cut into pieces
1 onion, chopped
2 pounds Yukon gold potatoes, thinly sliced
1 cup shredded Cheddar cheese
6 tbs sour cream
Cook bacon in a skillet until crisp. Remove bacon reserving 3 tbs drippings in
skillet. Drain bacon on paper towels. Add onions to skillet, cook and stir 5
min. Stir in potatoes, cover. Cook 25 min. or until potatoes are tender. Top
with cheese and bacon, cook covered until cheese is melted. SERVE TOPPED WITH SOUR CREAM. Makes 12 servings.*
