Chicken Salad
2 cups diced cooked chicken
2 tbsp. minced red onion
1 stalk celery, diced
1 tbsp. relish
1/2 lemon (juiced)
1/2 cup mayonnaise
1 cup grapes or chopped apple
1/4 cup chopped almonds or pecans (optional)
salt and pepper to taste
Mix all ingredients well and chill at least 2 hours before serving.
